Steve's Guacamole 4 ripe avacados 1/2 cup finely chopped onion 1 tbs chopped garlic 1/4 cup mayonaise 1/2 tsp Salt 1 tsp Paprika Cayene pepper (to taste) 1/2 tbs lemon juice 1 cup diced tomatoes -------------------------------- Mash avacados, onion, and garlic together, but leave it lumpy. Mix together with remaining ingredients (except tomatoes) with a fork until blended, but still lumpy. Add tomatoes last. You can use fresh or canned tomatoes. I like stewed tomatoes or Rotel canned tomatoes with peppers for added flavor. Just be sure to drain canned tomatoes well. The secret to good guac is not to mash the avacados into a paste, but leaving it lumpy. Use a potato masher and stop when it's still very chunky. You can bring it to the consistency you want when you mix in the remaining ingredients. Add the tomatoes last and mix them in gently so they don't break apart.
